Ingredients

  • 8 fresh peaches, peeled and sliced
  • 1/4 cup granulated sugar (for peaches)
  • 1/4 cup brown sugar (for peaches)
  • 1/4 teaspoon ground cinnamon
  • 1/8 teaspoon ground nutmeg
  • 1 teaspoon fresh lemon juice
  • 2 teaspoons cornstarch
  • 1 cup all-purpose flour
  • 1/4 cup granulated sugar
  • 1/4 cup brown sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 6 tablespoons unsalted butter, chilled and diced
  • 1/4 cup boiling water
  • 3 tablespoons granulated sugar (for topping)
  • 1 teaspoon ground cinnamon (for topping)

Instructions

  1. Preheat oven to 425°F (220°C).
  2. In a large saucepan, combine peaches, sugars, cinnamon, nutmeg, lemon juice, and cornstarch. Bring to a boil and simmer until thickened, about 10 minutes.
  3. Pour peach mixture into a 2-quart baking dish.
  4. In a large bowl, mix flour, sugars, baking powder, and salt. Cut in butter until mixture resembles coarse crumbs.
  5. Stir in boiling water just until combined. Drop spoonfuls of dough over the peaches.
  6. Mix the remaining cinnamon and sugar, and sprinkle over the topping.
  7. Bake for 30 minutes or until topping is golden and cooked through.
