Ingredients

  • 14 ounces smoked sausage, sliced into rounds
  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 1 red bell pepper, chopped
  • 2 cloves garlic, minced
  • 1 cup long grain white rice
  • 2 cups chicken broth
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 2 green onions, sliced (optional for garnish)

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add sliced smoked sausage and cook until browned on both sides, about 4–5 minutes.
  3. Stir in diced onion and red bell pepper, cooking until softened, about 3–4 minutes.
  4. Add minced garlic and cook for 30 seconds until fragrant.
  5. Pour in the rice, chicken broth, and paprika. Stir to combine.
  6. Bring to a boil, then reduce heat to low, cover, and simmer for 20–22 minutes or until rice is tender and liquid is absorbed.
  7. Season with salt and pepper to taste.
  8. Fluff rice with a fork and garnish with sliced green onions before serving.
