Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
Place the carrot sticks on the baking sheet. Drizzle with olive oil, add minced garlic, salt, pepper, and Italian seasoning. Toss to coat evenly.
Sprinkle half of the Parmesan cheese over the carrots.
Roast for 20-25 minutes, or until carrots are tender and golden.
Remove from the oven, sprinkle with the remaining Parmesan and fresh parsley if using.
Serve warm.
