Bring 2 cups of water to a boil in a saucepan.
Remove from heat, add the tea bags, and steep for 5 minutes.
Discard the tea bags and stir in honey while warm. Set aside to cool.
In another saucepan, combine remaining 2 cups water, sliced peaches, and ginger.
Bring to a boil, then reduce heat and simmer for 10 minutes.
Remove from heat and let cool slightly.
Strain the peach-ginger mixture into the tea base.
Pour into a pitcher and refrigerate until chilled.
To serve, fill glasses with ice, fresh mint, and pour the iced tea over.
