Ingredients

  • 4 cups water, divided
  • 2 black tea bags
  • 2 ripe peaches, pitted and sliced
  • 1-inch piece fresh ginger, peeled and sliced
  • 1/4 cup honey or to taste
  • 1 small bunch fresh mint leaves
  • Ice cubes, for serving

Instructions

  1. Bring 2 cups of water to a boil in a saucepan.
  2. Remove from heat, add the tea bags, and steep for 5 minutes.
  3. Discard the tea bags and stir in honey while warm. Set aside to cool.
  4. In another saucepan, combine remaining 2 cups water, sliced peaches, and ginger.
  5. Bring to a boil, then reduce heat and simmer for 10 minutes.
  6. Remove from heat and let cool slightly.
  7. Strain the peach-ginger mixture into the tea base.
  8. Pour into a pitcher and refrigerate until chilled.
  9. To serve, fill glasses with ice, fresh mint, and pour the iced tea over.
