Ingredients

  • 1 tbsp olive oil
  • 1/2 onion, finely chopped
  • 2 tsp minced garlic
  • 1 tbsp curry powder
  • 1 can (13.5 oz) coconut milk
  • 2 cups chicken broth
  • 1 tbsp soy sauce
  • 2 cups cooked chicken, shredded or diced
  • 1 cup frozen peas and carrots
  • Salt and pepper, to taste

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add the chopped onion and sauté until soft and translucent, about 3–4 minutes.
  3. Stir in garlic and curry powder; cook for 1 minute until fragrant.
  4. Pour in coconut milk, chicken broth, and soy sauce. Stir well and bring to a gentle simmer.
  5. Add cooked chicken and frozen peas and carrots. Simmer for 8–10 minutes.
  6. Season with salt and pepper to taste. Serve hot.
