Heat olive oil in a large pot over medium heat.
Add the chopped onion and sauté until soft and translucent, about 3–4 minutes.
Stir in garlic and curry powder; cook for 1 minute until fragrant.
Pour in coconut milk, chicken broth, and soy sauce. Stir well and bring to a gentle simmer.
Add cooked chicken and frozen peas and carrots. Simmer for 8–10 minutes.
Season with salt and pepper to taste. Serve hot.
