Ingredients

  • 1 pound salmon, cooked and flaked
  • 3 cups cooked sushi rice
  • 1/4 cup rice vinegar
  • 2 tablespoons sugar
  • 1 teaspoon salt
  • 1/2 cup Japanese mayo
  • 2 tablespoons sriracha
  • 1/2 cup cream cheese, softened
  • 2 sheets roasted seaweed, crumbled
  • 2 green onions, sliced
  • 1 avocado, sliced
  • Sesame seeds for garnish

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a bowl, combine sushi rice, rice vinegar, sugar, and salt.
  3. Press rice mixture evenly into a greased 9x13 baking dish.
  4. Mix flaked salmon with Japanese mayo, sriracha, and cream cheese until smooth.
  5. Spread the salmon mixture over the rice layer.
  6. Bake for 15 minutes or until heated through.
  7. Top with crumbled seaweed, sliced avocado, green onions, and sesame seeds.
  8. Serve warm, scooping portions into nori sheets if desired.
