Preheat oven to 350°F (175°C).
Cook the lasagna noodles according to package directions. Drain and set aside.
In a medium bowl, mix ricotta cheese, Parmesan, spinach, egg, Italian seasoning, garlic powder, salt, and pepper.
Spread a spoonful of the ricotta mixture over each noodle, then roll up tightly.
Spread 1 cup of marinara sauce on the bottom of a baking dish. Place the rolls seam-side down in the dish.
Top with remaining marinara sauce and sprinkle mozzarella cheese evenly over the rolls.
Cover with foil and bake for 20 minutes. Remove foil and bake another 10 minutes, until cheese is bubbly.
Garnish with fresh herbs if desired and serve warm.
