Ingredients

  • 1 cup unsalted butter, softened
  • 1½ cups granulated sugar
  • 1 large egg
  • 1½ teaspoons vanilla extract
  • 2¾ cups all-purpose flour
  • 1½ teaspoons baking powder
  • ½ teaspoon salt
  • ¼ cup rainbow sprinkles (plus extra for topping)

Instructions

  1. Preheat oven to 350°F. Line baking sheets with parchment paper.
  2. In a large bowl, cream butter and sugar until light and fluffy.
  3. Add egg and vanilla extract; mix until combined.
  4. In a separate bowl, whisk together flour, baking powder, and salt.
  5. Gradually add dry ingredients to the wet ingredients, mixing until a dough forms.
  6. Fold in ¼ cup sprinkles.
  7. Scoop dough into balls and place on prepared baking sheets. Slightly flatten each ball and top with more sprinkles.
  8. Bake for 10-12 minutes or until edges are just beginning to brown.
  9. Let cool on the pan for 5 minutes before transferring to a wire rack to cool completely.
