Preheat oven to 300°F and prepare a muffin pan by greasing well or lining with silicone cups.
Blend eggs, cottage cheese, Monterey Jack cheese, salt, pepper, and garlic powder until smooth.
Pour mixture evenly into prepared muffin pan or silicone cups.
Sprinkle crumbled bacon on top of each egg bite.
Place the muffin tray in a larger pan filled with 1 inch of water to create a water bath.
Bake for 30 minutes or until the egg bites are set.
Let cool for a few minutes before removing and serving.
