Preheat oven to 375°F (190°C) and grease a muffin tin.
In a skillet, cook ground beef over medium heat until browned. Drain any excess fat.
Add taco seasoning and water. Simmer for 5 minutes until thickened.
Flatten each biscuit and press into the muffin tin cups.
Spoon a layer of salsa into each biscuit cup, followed by the taco meat, and top with shredded cheese.
Bake for 15-18 minutes until golden brown.
Remove from oven and let cool slightly. Top with sour cream, green onions, and jalapeño slices if desired.
