Ingredients

  • 2 cans black beans, drained and rinsed
  • 1 can sweet corn, drained
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1 small red onion, finely chopped
  • 2 Roma tomatoes, seeded and diced
  • 1 jalapeño, seeded and minced
  • 1/2 cup chopped fresh cilantro
  • 1/2 cup olive oil
  • 1/4 cup red wine vinegar
  • 1 tablespoon lime juice
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. In a large bowl, combine the black beans, corn, bell peppers, onion, tomatoes, jalapeño, and cilantro.
  2. In a separate bowl, whisk together olive oil, red wine vinegar, lime juice, garlic powder, salt, and black pepper.
  3. Pour the dressing over the bean mixture and toss until everything is evenly coated.
  4. Cover and refrigerate for at least 1 hour to let flavors meld.
  5. Serve chilled with tortilla chips or as a side salad.
