Ingredients

  • 1 1/2 cups unsweetened vegan yogurt (coconut or almond)
  • 1 tbsp maple syrup (or agave)
  • 1/2 tsp pure vanilla extract
  • 2 tbsp freeze-dried strawberries, crushed into powder
  • 1/2 cup fresh strawberries, sliced
  • 1/2 cup blueberries
  • 1/2 cup chopped mango or peaches
  • 1/4 cup chopped nuts or seeds (optional)

Instructions

  1. Line an 8x8-inch baking dish with parchment paper.
  2. In a bowl, mix the vegan yogurt, maple syrup, vanilla extract, and freeze-dried strawberry powder until well combined.
  3. Spread the mixture evenly into the prepared dish.
  4. Top with sliced strawberries, blueberries, mango, and optional nuts.
  5. Place in the freezer for at least 4 hours or until firm.
  6. Once frozen, cut into bars and enjoy!
