Ingredients

  • 1 ½ cups white chocolate chips
  • ½ cup dried blueberries, finely chopped
  • 4 oz cream cheese, softened
  • ½ teaspoon vanilla extract
  • 2 tablespoons powdered sugar
  • White chocolate or almond bark, for coating

Instructions

  1. In a medium bowl, mix softened cream cheese, vanilla extract, and powdered sugar until smooth.
  2. Stir in finely chopped dried blueberries.
  3. Melt white chocolate chips in a microwave-safe bowl, stirring every 20 seconds until smooth.
  4. Add melted white chocolate to the cream cheese mixture and mix until well combined.
  5. Chill the mixture for 2 hours or until firm enough to roll.
  6. Scoop and roll into 1-inch balls. Place on a lined tray and freeze for 20 minutes.
  7. Melt coating chocolate and dip each truffle until fully coated. Let set on parchment paper.
  8. Refrigerate until ready to serve.
