Ingredients

  • 1 pound ground beef
  • 1 small onion, chopped
  • 2 garlic cloves, minced
  • 2-1/2 cups marinara or spaghetti sauce
  • 1-2/3 cups water
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1-1/2 cups uncooked mafalda or mini lasagna noodles
  • 1/2 cup ricotta cheese
  • 1 cup shredded part-skim mozzarella cheese
  • 2 tablespoons grated Parmesan cheese
  • Chopped fresh basil or parsley (optional, for garnish)

Instructions

  1. In a large skillet, cook ground beef, onion, and garlic over medium heat until the meat is no longer pink; drain.
  2. Stir in the marinara sauce, water, salt, pepper, and noodles.
  3. Bring to a boil. Reduce heat; cover and simmer for 15-20 minutes or until noodles are tender.
  4. Drop ricotta by spoonfuls over the top. Sprinkle with mozzarella and Parmesan.
  5. Cover and cook for 3-5 minutes longer or until cheese is melted.
  6. Garnish with chopped basil or parsley before serving, if desired.
