Ingredients

  • 1 cup glutinous rice flour
  • 1/4 cup sugar
  • 2/3 cup water
  • Cornstarch for dusting
  • Fresh strawberries
  • Sweet red bean paste or white bean paste (optional)

Instructions

  1. Wash and hull the strawberries. Pat them dry.
  2. Wrap each strawberry in a thin layer of sweet bean paste if desired.
  3. In a microwave-safe bowl, whisk together glutinous rice flour, sugar, and water until smooth.
  4. Cover loosely with plastic wrap and microwave for 1 minute. Stir.
  5. Microwave for another 1–2 minutes until the dough becomes translucent.
  6. Dust your work surface with cornstarch. Transfer the dough onto it.
  7. Divide the dough into portions and flatten each into a circle.
  8. Place a prepared strawberry in the center of each circle and wrap the dough around it, sealing the edges.
  9. Dust the finished mochi lightly with cornstarch to prevent sticking.
