Ingredients

  • 4 ears of fresh corn, husked
  • 1 cup cherry tomatoes, halved
  • 1 large avocado, diced
  • β…“ cup red onion, finely chopped
  • β…“ cup chopped cilantro
  • 1–2 tbsp olive oil
  • 1 tbsp fresh lime juice
  • Salt & black pepper, to taste

Instructions

  1. Grill the corn until slightly charred, then let it cool.
  2. Cut the kernels off the cob and place in a large bowl.
  3. Add tomatoes, avocado, red onion, and cilantro.
  4. Drizzle with olive oil and lime juice.
  5. Season with salt and pepper, then toss gently to combine.
  6. Serve immediately or chill until ready to eat.
