Ingredients

  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1/3 cup finely chopped oil-packed sun-dried tomatoes, drained
  • 1 1/2 cups chopped fresh spinach
  • Salt and freshly ground black pepper, to taste
  • 8 slices sourdough bread
  • 3 Tbsp butter, softened

Instructions

  1. In a mixing bowl, combine ricotta, mozzarella, sun-dried tomatoes, and spinach. Season with salt and pepper.
  2. Spread the cheese mixture over 4 slices of bread and top with the remaining bread slices.
  3. Butter the outside of each sandwich on both sides.
  4. Heat a large non-stick skillet over medium heat. Grill sandwiches until golden brown and cheese is melted, about 3–4 minutes per side.
  5. Serve warm and enjoy!
