Ingredients

  • 1 can (15 oz) chickpeas, drained and rinsed
  • 1/2 red onion, finely chopped
  • 1 celery stalk, finely chopped
  • 1/2 red bell pepper, finely chopped
  • 1/4 cup vegan mayo
  • 1 tbsp Dijon mustard
  • 1 tbsp lemon juice
  • 1/2 tsp garlic powder
  • Salt and pepper to taste
  • Chopped parsley for garnish (optional)

Instructions

  1. In a large bowl, mash the chickpeas with a fork or potato masher, leaving some chunks for texture.
  2. Add the red onion, celery, and red bell pepper to the bowl.
  3. Stir in vegan mayo, Dijon mustard, lemon juice, garlic powder, salt, and pepper.
  4. Mix everything together until well combined.
  5. Garnish with fresh parsley if desired and serve immediately or chill before serving.
