Cook the noodles according to package instructions. Drain and set aside.
In a large skillet over medium heat, add sesame oil and minced garlic. Cook for 1-2 minutes until fragrant.
Stir in soy sauce, hoisin sauce, maple syrup, rice vinegar, and red pepper flakes if using.
Add the cooked noodles and toss to coat evenly in the sauce.
Garnish with green onions and sesame seeds before serving.
