Ingredients

  • 1 medium onion, chopped
  • 1/4 cup olive oil
  • 2 medium zucchini, chopped
  • 2 garlic cloves, minced
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/4 teaspoon dried oregano
  • 1/4 teaspoon dried basil
  • 1 can (14-1/2 ounces) diced tomatoes, undrained
  • 1 can (6 ounces) tomato paste
  • 1/2 cup water
  • Hot cooked pasta
  • Grated Parmesan cheese (optional)

Instructions

  1. In a large skillet, sauté onion in olive oil until tender.
  2. Add zucchini and cook until just tender, about 5 minutes.
  3. Stir in garlic, salt, pepper, oregano, and basil. Cook for 1 minute.
  4. Add diced tomatoes, tomato paste, and water. Bring to a boil.
  5. Reduce heat and simmer uncovered for 10–15 minutes or until thickened.
  6. Serve over hot cooked pasta and top with Parmesan cheese if desired.
