Ingredients

  • 1 1/2 cups all-purpose flour
  • 1/2 cup unsalted butter, cold and diced
  • 1-2 tablespoons cold water
  • 1/2 cup soft light brown sugar
  • 2 large eggs
  • 1/4 cup unsalted butter, melted and slightly cooled
  • 1 tablespoon white wine vinegar (or lemon juice)
  • 1/2 teaspoon ground cinnamon
  • Pinch of salt
  • 1/2 cup raisins
  • 1/2 cup sultanas or golden raisins
  • 1/2 cup chopped walnuts or pecans
  • 1/4 cup glacé cherries, chopped (optional)

Instructions

  1. Preheat oven to 350°F (175°C).
  2. To make the pastry, rub the cold diced butter into the flour using your fingertips until the mixture resembles breadcrumbs.
  3. Add cold water gradually and mix until a dough forms. Wrap and chill for 20 minutes.
  4. Roll out the dough on a floured surface and line a tart tin. Trim edges and chill for another 10 minutes.
  5. In a large bowl, whisk together brown sugar, eggs, melted butter, vinegar, cinnamon, and salt.
  6. Stir in the dried fruits and nuts until well combined.
  7. Pour the filling into the prepared tart shell and smooth the top.
  8. Bake for 30-35 minutes until golden and set. Let cool before serving.
