Ingredients

  • 4 cups mixed salad greens (arugula, spinach, butter lettuce)
  • 1 cup strawberries, hulled and sliced
  • 1 avocado, diced
  • 1/2 cup radishes, thinly sliced
  • 1/3 cup crumbled feta cheese
  • 1/4 cup pistachios or sliced almonds (toasted optional)
  • 1/4 small red onion, thinly sliced
  • For the Citrus Dressing:
  • 3 tablespoons fresh orange juice
  • 2 tablespoons lemon juice
  • 1 teaspoon Dijon mustard
  • 1 teaspoon honey or maple syrup
  • 1/4 cup olive oil
  • Salt and freshly ground pepper to taste

Instructions

  1. In a large bowl, combine the mixed salad greens, sliced strawberries, diced avocado, radishes, red onion, and crumbled feta.
  2. In a separate bowl or jar, whisk together the orange juice, lemon juice, mustard, and honey.
  3. Gradually whisk in the olive oil until the dressing is well emulsified. Season with salt and pepper.
  4. Drizzle the dressing over the salad just before serving and toss gently to combine.
  5. Top with toasted nuts for extra crunch and serve immediately.
