Ingredients

  • 8 rice paper wrappers
  • 4 oz rice noodles
  • 1/2 block extra-firm tofu, pressed and sliced
  • 1/2 cup shredded carrots
  • 1/2 cup red bell pepper, thinly sliced
  • 1/2 cup cucumber, julienned
  • 1/2 cup purple cabbage, shredded
  • 1/4 cup fresh mint leaves
  • 1/4 cup fresh cilantro
  • 1/4 cup fresh basil
  • 1 tbsp oil for frying tofu (optional)

Instructions

  1. Cook the rice noodles according to package instructions, rinse with cold water, and set aside.
  2. Optional: Pan-fry tofu slices in oil until golden on both sides, or leave raw for a lighter version.
  3. Soak one rice paper wrapper at a time in warm water for about 10 seconds until pliable.
  4. Lay the wrapper on a flat surface and layer in noodles, tofu, and vegetables in the center.
  5. Add herbs on top and roll tightly by folding in the sides and rolling up like a burrito.
  6. Repeat with remaining wrappers and serve immediately with peanut or hoisin dipping sauce.
