Cook the rice noodles according to package instructions, rinse with cold water, and set aside.
Optional: Pan-fry tofu slices in oil until golden on both sides, or leave raw for a lighter version.
Soak one rice paper wrapper at a time in warm water for about 10 seconds until pliable.
Lay the wrapper on a flat surface and layer in noodles, tofu, and vegetables in the center.
Add herbs on top and roll tightly by folding in the sides and rolling up like a burrito.
Repeat with remaining wrappers and serve immediately with peanut or hoisin dipping sauce.
