Ingredients

  • 6–8 rice paper wrappers
  • 1 mango, thinly sliced
  • 1 kiwi, peeled and thinly sliced
  • 1 cup strawberries, hulled and sliced
  • 1/2 cup blueberries
  • 1/2 cup raspberries
  • 1/4 cup shredded coconut (optional)
  • Fresh mint leaves (optional)

Instructions

  1. Fill a large bowl with warm water. Submerge one rice paper wrapper for about 10 seconds until it softens.
  2. Lay the softened wrapper on a clean, damp towel or cutting board.
  3. Arrange sliced fruits in the center of the wrapper. Add mint and coconut if using.
  4. Fold the sides over the filling, then roll it tightly from bottom to top like a burrito.
  5. Repeat with remaining wrappers and fruit.
  6. Serve immediately or chill in the fridge before serving.
