Ingredients

  • 2 pounds baby potatoes, halved
  • 1/4 cup melted butter
  • 3 tablespoons olive oil
  • 5 cloves garlic, minced
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup chopped fresh parsley
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, mix melted butter, olive oil, minced garlic, salt, and pepper.
  3. Add halved baby potatoes and toss to coat evenly.
  4. Spread the potatoes out in a single layer on a baking sheet lined with parchment paper.
  5. Roast in the oven for 25-30 minutes or until golden and crispy, flipping halfway through.
  6. Remove from oven and sprinkle with grated Parmesan and chopped parsley.
