Preheat your oven to 400°F (200°C).
In a large bowl, mix melted butter, olive oil, minced garlic, salt, and pepper.
Add halved baby potatoes and toss to coat evenly.
Spread the potatoes out in a single layer on a baking sheet lined with parchment paper.
Roast in the oven for 25-30 minutes or until golden and crispy, flipping halfway through.
Remove from oven and sprinkle with grated Parmesan and chopped parsley.
