Ingredients

  • 1 lb shrimp, peeled and deveined
  • 2 cups cooked rice
  • 3 tbsp unsalted butter
  • 4 cloves garlic, minced
  • 1/2 tsp smoked paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp red pepper flakes (optional)
  • 1 tbsp lemon juice
  • 2 tbsp chopped parsley
  • 1/2 cup cherry tomatoes, halved

Instructions

  1. In a large skillet, melt butter over medium heat.
  2. Add minced garlic and sauté for 1 minute until fragrant.
  3. Add shrimp, paprika, salt, black pepper, and red pepper flakes. Cook for 3-4 minutes per side until shrimp turn pink.
  4. Stir in lemon juice and parsley, then remove from heat.
  5. Layer cooked rice on plates, top with shrimp, and garnish with cherry tomatoes.
  6. Serve warm and enjoy!
