Ingredients

  • 1 box fudge brownie mix (18-19 oz)
  • 1/4 cup all-purpose flour
  • 1/4 cup vegetable oil
  • 2 large eggs
  • 1/2 cup semi-sweet chocolate chips
  • 1/3 cup evaporated milk
  • 1/4 cup granulated sugar
  • 1 large egg yolk
  • 2 tablespoons unsalted butter
  • 1 teaspoon vanilla extract
  • 1 cup sweetened shredded coconut
  • 1/2 cup chopped pecans

Instructions

  1. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. In a large bowl, combine brownie mix, flour, oil, and eggs until well blended.
  3. Fold in chocolate chips.
  4. Scoop tablespoon-sized balls onto prepared baking sheets.
  5. Bake 9-11 minutes until edges are set. Cool completely.
  6. In a saucepan over medium heat, whisk evaporated milk, sugar, egg yolk, and butter until thickened (5-7 minutes).
  7. Remove from heat and stir in vanilla, coconut, and pecans.
  8. Spread frosting over cooled cookies and let set before serving.
