Ingredients

  • 1 1/2 lbs boneless skinless chicken thighs, cut into 1-inch cubes
  • 1/2 tsp kosher salt
  • 1/2 tsp garlic powder
  • 1/4 tsp ground black pepper
  • 2 tbsp olive oil
  • 2 red bell peppers, cut into 1-inch pieces
  • 1 orange bell pepper, cut into 1-inch pieces
  • 2 tbsp red wine vinegar
  • 1 tsp Dijon mustard
  • 1 tsp honey
  • 1 small garlic clove, minced
  • 1/4 cup fresh parsley, finely chopped
  • 1/4 cup fresh cilantro, finely chopped
  • 1/2 tsp kosher salt (for vinaigrette)
  • 1/4 tsp ground black pepper (for vinaigrette)
  • 1/2 cup olive oil (for vinaigrette)

Instructions

  1. Preheat your grill or grill pan to medium-high heat.
  2. Season the chicken with salt, garlic powder, black pepper, and olive oil. Toss to coat evenly.
  3. Thread the chicken and bell pepper pieces alternately onto skewers.
  4. Grill skewers for 4-5 minutes per side, until chicken is cooked through and slightly charred.
  5. Meanwhile, whisk together vinegar, Dijon mustard, honey, and garlic in a bowl.
  6. Add parsley, cilantro, salt, and pepper to the vinaigrette mixture.
  7. Slowly drizzle in olive oil while whisking until the vinaigrette is well combined.
  8. Serve the grilled skewers with a generous drizzle of the herbaceous vinaigrette.
