Ingredients

  • 1 lb ground beef
  • 4 medium russet potatoes, peeled and diced
  • 1/2 onion, chopped
  • 1/2 green bell pepper, chopped
  • 1/2 red bell pepper, chopped
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp paprika
  • Salt and pepper to taste
  • Shredded cheese, optional
  • Fresh parsley, for garnish

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add diced potatoes and cook, stirring occasionally, for 10-12 minutes or until golden and tender.
  3. Push potatoes to the side and add ground beef to the skillet.
  4. Cook the beef until browned, breaking it up with a spoon.
  5. Add onion and bell peppers, and cook until softened.
  6. Sprinkle with garlic powder, paprika, salt, and pepper. Mix everything together and cook for another 3-4 minutes.
  7. Top with shredded cheese if using, cover until melted.
  8. Garnish with fresh parsley and serve hot.
