Ingredients

  • 1 lb ground turkey
  • 2 medium sweet potatoes, peeled and diced
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 zucchini, diced
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon cumin
  • 1/2 teaspoon dried oregano
  • Salt and black pepper to taste
  • 2 tablespoons olive oil
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Heat 1 tablespoon of olive oil in a large skillet over medium heat.
  2. Add the ground turkey and cook until browned, breaking it up with a spoon.
  3. Transfer the turkey to a plate and set aside.
  4. Add the remaining olive oil to the skillet.
  5. Cook onion and garlic for 2–3 minutes until fragrant.
  6. Add sweet potatoes and cook for 8–10 minutes, stirring occasionally.
  7. Stir in bell pepper, zucchini, smoked paprika, cumin, oregano, salt, and pepper.
  8. Return the turkey to the skillet and mix well.
  9. Cover and cook for another 5–7 minutes until the vegetables are tender.
  10. Garnish with chopped parsley before serving.
