Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
Roll out the pie crusts on a lightly floured surface and cut into 3-4 inch circles or desired spooky shapes.
Spoon about 1 tablespoon of cherry pie filling into the center of half the cutouts. Sprinkle with mini chocolate chips.
Top with the remaining cutouts and press the edges with a fork to seal.
Use a sharp knife to cut small slits or spooky designs for venting.
Beat the egg with milk and brush over the tops of the pies. Add a little red gel food coloring into slits if desired for a ‘bloody’ effect.
Place pies on the prepared baking sheet and bake for 15–18 minutes, or until golden brown.
Cool slightly before serving. Dust with powdered sugar if desired.
