Heat olive oil in a large skillet over medium heat.
Add diced chicken and season with salt, pepper, and paprika. Cook until browned and cooked through.
Remove chicken from the skillet and set aside.
In the same skillet, add garlic and onions, and sauté for 2 minutes.
Add bell pepper, zucchini, and broccoli. Stir-fry for 5-7 minutes until tender-crisp.
Return the chicken to the skillet, toss everything together, and cook for an additional 2-3 minutes.
Garnish with fresh parsley and serve warm.
