Ingredients

  • 1 lb boneless, skinless chicken breasts
  • 1 tbsp olive oil
  • Salt and pepper, to taste
  • 6 cups chopped romaine lettuce
  • 1 cup cherry tomatoes, halved
  • 1 avocado, sliced
  • 1/4 cup red onion, thinly sliced
  • 1/2 cup crumbled feta cheese
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh chives, chopped
  • 1/2 cup plain Greek yogurt
  • 2 tbsp lemon juice
  • 1 tbsp Dijon mustard
  • 1 tbsp olive oil (for dressing)
  • 1 garlic clove
  • Salt and pepper, to taste (for dressing)

Instructions

  1. Preheat the grill to medium-high heat. Brush chicken breasts with olive oil and season with salt and pepper.
  2. Grill chicken for about 6-7 minutes on each side or until fully cooked. Let it rest for 5 minutes, then slice.
  3. To make the dressing, blend Greek yogurt, lemon juice, Dijon mustard, olive oil, garlic, parsley, chives, salt, and pepper until smooth.
  4. In a large bowl, combine lettuce, cherry tomatoes, avocado, red onion, and feta cheese.
  5. Top the salad with grilled chicken slices and drizzle with green goddess dressing before serving.
