Ingredients

  • 1/2 cup canned chickpeas, rinsed and drained
  • 1/2 cup cherry tomatoes, halved
  • 1/2 cucumber, sliced or chopped
  • 1/2 red bell pepper, chopped
  • 1/2 avocado, sliced
  • 1 tbsp hummus
  • 1 tbsp crumbled feta cheese
  • 1 tsp olive oil
  • 1/4 tsp salt (or to taste)
  • 1/4 tsp black pepper
  • 1/4 tsp dry oregano or Italian herb mix
  • Fresh parsley, chopped (optional)

Instructions

  1. Add chickpeas, tomatoes, cucumber, bell pepper, and avocado to a medium-sized bowl.
  2. Add the hummus and sprinkle the feta cheese on top.
  3. Drizzle with olive oil and season with salt, pepper, and oregano or Italian herbs.
  4. Top with freshly chopped parsley if desired.
  5. Mix everything together or keep ingredients separated for a bowl-style presentation. Enjoy immediately!
