Ingredients

  • 2 cups whole grain pasta, cooked and cooled
  • 1 large cucumber, thinly sliced
  • 1 cup cherry tomatoes, halved
  • 1/4 red onion, thinly sliced
  • 1/4 cup chopped fresh dill
  • 1/4 cup crumbled feta cheese
  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar
  • 1 tablespoon lemon juice
  • Salt and black pepper to taste

Instructions

  1. Cook the pasta according to package directions, then drain and let it cool completely.
  2. In a large bowl, combine cooked pasta, cucumber, cherry tomatoes, red onion, dill, and feta cheese.
  3. In a small bowl, whisk together olive oil, red wine vinegar, lemon juice, salt, and pepper.
  4. Pour the dressing over the salad and toss to combine.
  5. Chill for at least 30 minutes before serving for best flavor.
