Ingredients

  • 3 cups old-fashioned oats
  • 1/2 cup chopped pecans
  • 1/2 cup raw sunflower seeds
  • 2 teaspoons pumpkin pie spice
  • 1/4 teaspoon salt
  • 1/2 cup pure pumpkin puree
  • 1/2 cup maple syrup
  • 1 tablespoon coconut oil (melted)
  • 1 teaspoon vanilla extract
  • 1/2 cup raisins (optional)

Instructions

  1. Preheat the oven to 325°F (163°C). Line a large baking sheet with parchment paper.
  2. In a large bowl, mix together oats, pecans, sunflower seeds, pumpkin pie spice, and salt.
  3. In a separate bowl, whisk together pumpkin puree, maple syrup, melted coconut oil, and vanilla extract.
  4. Pour the wet ingredients over the dry and stir until fully coated.
  5. Spread the granola mixture evenly on the prepared baking sheet.
  6. Bake for 30–35 minutes, stirring halfway through, until golden and crisp.
  7. Let the granola cool completely before stirring in raisins if using. Store in an airtight container.
