Ingredients

  • 1/2 cup uncooked quinoa, rinsed
  • 1 cup water
  • 1 cup chopped mushrooms
  • 1/2 red bell pepper, chopped
  • 1/2 zucchini, chopped
  • 1/2 cup marinara or pizza sauce
  • 1/4 tsp garlic powder
  • 1/4 tsp dried oregano
  • Salt and pepper to taste
  • 1/2 cup shredded mozzarella cheese
  • 2 tbsp grated parmesan cheese
  • Fresh basil or parsley for garnish (optional)

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a saucepan, combine quinoa and water. Bring to a boil, then reduce heat, cover, and simmer for 15 minutes or until water is absorbed.
  3. While the quinoa cooks, sauté mushrooms, bell pepper, and zucchini in a pan over medium heat until just tender. Season with garlic powder, oregano, salt, and pepper.
  4. Once quinoa is done, fluff with a fork and divide between two oven-safe bowls.
  5. Top each bowl with sautéed vegetables and marinara sauce. Sprinkle with mozzarella and parmesan cheese.
  6. Place bowls on a baking sheet and bake for 10-12 minutes, or until cheese is melted and bubbly.
  7. Garnish with fresh basil or parsley if desired and serve warm.
