Ingredients

  • 1 head romaine lettuce, chopped
  • 1 pint cherry tomatoes, halved
  • 1/2 red onion, thinly sliced
  • 1 cup canned corn, drained
  • 1 cup canned black beans, drained and rinsed
  • 1 avocado, diced
  • 1/4 cup fresh cilantro, chopped
  • 1/4 cup cotija cheese, crumbled
  • 1/2 cup crushed tortilla chips
  • 2 boneless skinless chicken breasts, cooked and sliced

Instructions

  1. Prepare the salad ingredients and layer them in a large bowl: lettuce, tomatoes, onion, corn, black beans, avocado, cilantro, cheese, chips, and chicken.
  2. In a small bowl or blender, whisk together or blend the cilantro lime vinaigrette ingredients until smooth.
  3. Drizzle the vinaigrette over the salad and toss gently to combine.
  4. Serve immediately and enjoy!
