Ingredients

  • 1 pound lean ground beef
  • 1 tablespoon chili powder
  • 1 teaspoon ground cumin
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • Salt, to taste
  • 8 cups chopped romaine lettuce
  • 1 cup halved cherry tomatoes
  • 1 avocado, diced
  • 1/4 cup chopped fresh cilantro
  • 1/2 cup canned black beans, drained and rinsed
  • 1/2 cup canned corn, drained
  • 1/4 cup shredded cheddar cheese
  • Crushed tortilla chips, optional

Instructions

  1. In a large skillet over medium-high heat, cook ground beef until browned, about 7–8 minutes.
  2. Drain excess fat, then season with chili powder, cumin, onion powder, garlic powder, and salt. Stir well to coat.
  3. In a large bowl, combine chopped romaine, cherry tomatoes, avocado, cilantro, black beans, corn, and cheddar cheese.
  4. Top with warm seasoned beef.
  5. Drizzle with cilantro lime vinaigrette and toss gently to combine.
  6. Garnish with crushed tortilla chips if desired and serve immediately.
