Ingredients

  • 1 ½ cups uncooked pasta (e.g. fusilli or rotini)
  • 1 ½ cups arugula
  • 1 cup chopped cucumber
  • 1 cup halved cherry tomatoes
  • ¼ cup chopped red onion
  • 2 cans tuna in olive oil, drained
  • 2 tbsp capers (optional)
  • Juice of 1 lemon
  • 2 tbsp olive oil
  • Sea salt and black pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  1. Cook the pasta according to the package instructions. Drain and rinse with cold water.
  2. In a large bowl, combine cooked pasta, arugula, cucumber, cherry tomatoes, red onion, and tuna.
  3. Add capers if using, then drizzle with lemon juice and olive oil.
  4. Season with sea salt and black pepper, toss gently to combine.
  5. Garnish with chopped fresh parsley before serving, if desired.
