Ingredients

  • 1 ½ pounds chicken breasts, cut into bite-sized pieces
  • 1 tablespoon sesame oil
  • 1 tablespoon avocado oil
  • Salt and pepper to taste
  • 2 tablespoons soy sauce
  • 2 tablespoons butter
  • 1 tablespoon lemon juice
  • 1 teaspoon garlic, minced
  • 2 eggs, beaten
  • 2 cups cold cooked rice
  • 2 tablespoons avocado oil (for rice)
  • 1 cup frozen peas and carrots
  • 2 tablespoons soy sauce (for rice)
  • 2 tablespoons butter (for rice)

Instructions

  1. Heat sesame oil and avocado oil in a skillet over medium-high heat.
  2. Add chicken, season with salt and pepper, and cook until browned and cooked through.
  3. Add soy sauce, butter, lemon juice, and garlic. Stir well and cook until combined.
  4. Remove chicken and keep warm.
  5. In the same pan, add oil for rice and heat over medium-high.
  6. Scramble the eggs, then add cold rice, peas, and carrots.
  7. Stir in soy sauce and butter, mixing everything until heated through.
  8. Serve chicken over the fried rice and enjoy!
