Ingredients

For the Dough

  • 2 cups all-purpose flour
  • 1 tablespoon granulated sugar
  • 1 teaspoon salt
  • 1 cup unsalted butter, cold and cubed
  • 4-5 tablespoons ice water

For the Filling

  • 3/4 cup brown sugar
  • 2 teaspoons ground cinnamon
  • 1 tablespoon all-purpose flour

For the Frosting

  • 3/4 cup powdered sugar
  • 1 tablespoon milk
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon

Additional

  • 1 egg, beaten (for egg wash)

Instructions

For the Dough

  1. In a large bowl, whisk together flour, sugar, and salt.
  2. Cut in the butter until the mixture resembles coarse crumbs.
  3. Gradually add ice water, mixing until dough comes together.
  4. Divide dough in half, wrap in plastic, and chill for at least 30 minutes.

For the Filling

  1. In a small bowl, mix brown sugar, cinnamon, and flour together.

Assembly

  1. Roll out dough to 1/8-inch thickness and cut into rectangles.
  2. Place a spoonful of filling onto half of the rectangles.
  3. Brush edges with egg wash and top with another rectangle.
  4. Press edges with a fork to seal and poke holes on top.
  5. Bake at 350°F for 20-25 minutes until golden brown.

For the Frosting

  1. In a bowl, whisk powdered sugar, milk, vanilla, and cinnamon until smooth.
  2. Once pop-tarts are cool, spread frosting over tops.
