Add salt and sugar, then gradually mix in flour until dough forms.
Knead dough on a floured surface for about 5 minutes until smooth.
Place dough in a greased bowl, cover, and let rise for 1 hour until doubled in size.
Preheat oven to 450°F. Line baking sheets with parchment paper.
Divide dough into 8 pieces. Roll each into a rope and shape into pretzels.
In a pot, bring 10 cups of water and baking soda to a boil. Boil pretzels one by one for 30 seconds each.
Place boiled pretzels on baking sheets, brush with egg wash, and sprinkle with coarse salt.
Bake for 12-14 minutes or until golden brown. Cool slightly before serving.
