Ingredients

  • 1 cup mashed sweet potatoes
  • 1/2 cup honey
  • 1/2 cup unsalted butter, melted
  • 1 cup milk
  • 2 large eggs
  • 1 cup cornmeal
  • 1 cup all-purpose flour
  • 1 tbsp baking powder
  • 1/2 tsp salt

Instructions

  1. Preheat your oven to 375°F (190°C). Grease an 8x8 inch baking dish or line it with parchment paper.
  2. In a large bowl, whisk together the mashed sweet potatoes, honey, melted butter, milk, and eggs until smooth.
  3. In a separate bowl, mix the cornmeal, flour, baking powder, and salt.
  4. Gradually stir the dry ingredients into the wet ingredients until just combined. Do not overmix.
  5. Pour the batter into the prepared baking dish and smooth the top.
  6. Bake for 30–35 minutes, or until a toothpick inserted into the center comes out clean.
  7. Let cool slightly before slicing. Serve warm with extra butter or honey if desired.
