Season chicken pieces with salt and pepper.
Heat 1 tablespoon of olive oil in a large skillet over medium heat. Cook chicken until golden and cooked through, about 5-6 minutes. Remove from the skillet and set aside.
In the same skillet, add the remaining tablespoon of olive oil and green beans. Cook until tender-crisp, about 4-5 minutes.
In a small bowl, whisk together honey, soy sauce, minced garlic, water, and cornstarch.
Add chicken back to the skillet, pour the sauce over, and toss everything together. Cook for an additional 2-3 minutes until the sauce thickens.
