Ingredients

  • 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
  • 2 tablespoons olive oil, divided
  • Salt and pepper, to taste
  • 3 tablespoons honey
  • 2 tablespoons low-sodium soy sauce
  • 1 tablespoon minced garlic
  • 1 tablespoon water
  • 2 teaspoons cornstarch
  • 8 oz green beans, trimmed

Instructions

  1. Season chicken pieces with salt and pepper.
  2. Heat 1 tablespoon of olive oil in a large skillet over medium heat. Cook chicken until golden and cooked through, about 5-6 minutes. Remove from the skillet and set aside.
  3. In the same skillet, add the remaining tablespoon of olive oil and green beans. Cook until tender-crisp, about 4-5 minutes.
  4. In a small bowl, whisk together honey, soy sauce, minced garlic, water, and cornstarch.
  5. Add chicken back to the skillet, pour the sauce over, and toss everything together. Cook for an additional 2-3 minutes until the sauce thickens.
  6. Serve hot and enjoy!
