Preheat the grill to high heat.
Form the ground beef into 1/3 pound patties, about 3/4 inch thick. Indent the center of each patty slightly with your thumb.
Season both sides generously with salt and pepper.
Place the patties on the grill and cook for 3 to 5 minutes per side until they reach your desired doneness.
Add cheese slices during the last minute of grilling if desired.
Toast the buns briefly on the grill.
Assemble the burgers with your favorite toppings and serve immediately.
