Ingredients

  • 1 cup cooked prawns, peeled and deveined
  • 2 cups cooked rotini or fusilli pasta
  • 1/2 cup pineapple chunks (fresh or canned)
  • 1/2 red bell pepper, diced
  • 1/4 red onion, finely chopped
  • 1/2 cucumber, diced
  • 1/4 cup chopped fresh cilantro
  • 1/3 cup plain Greek yogurt
  • 2 tbsp mayonnaise
  • 1 tbsp fresh lime juice
  • 1 tsp honey
  • Salt and black pepper, to taste

Instructions

  1. In a small bowl, whisk together the Greek yogurt, mayonnaise, lime juice, honey, salt, and pepper to make the dressing.
  2. In a large mixing bowl, combine the cooked pasta, prawns, pineapple, red bell pepper, red onion, cucumber, and cilantro.
  3. Pour the dressing over the salad and toss until everything is well coated.
  4. Chill the salad for at least 30 minutes before serving for the best flavor.
  5. Serve cold and enjoy a refreshing, tropical-inspired meal.
