Ingredients

  • 1/2 cup pineapple juice
  • 1/4 cup blue curaçao
  • 1/4 cup coconut rum
  • 1 bottle champagne (750 ml), chilled
  • Light corn syrup (for rimming glass)
  • Shredded sweetened coconut (for rimming glass)

Instructions

  1. Rim champagne glasses by dipping the rims in light corn syrup, then into shredded coconut.
  2. In a pitcher, stir together the pineapple juice, blue curaçao, and coconut rum.
  3. Top off with chilled champagne and gently stir to combine.
  4. Pour into prepared glasses and serve immediately.
