Ingredients

  • 8 ounces (225g) cream cheese, room temperature
  • 4 tablespoons (60g) unsalted butter, room temperature
  • 1/2 cup (120ml) whole milk, room temperature
  • 1/2 cup (65g) cake flour, sifted
  • 2 tablespoons (20g) cornstarch, sifted
  • 1/4 teaspoon salt
  • 5 large eggs, separated
  • 1/4 teaspoon cream of tartar
  • 1/2 cup (100g) granulated sugar
  • Powdered sugar, for dusting (optional)

Instructions

  1. Preheat oven to 320°F (160°C). Line an 8-inch round cake pan with parchment paper. Wrap the outside with foil to prevent leaks.
  2. In a medium saucepan, melt cream cheese, butter, and milk over low heat. Stir until smooth. Remove from heat and let cool.
  3. Whisk in the sifted cake flour, cornstarch, and salt until just combined.
  4. Add egg yolks one at a time, whisking until smooth.
  5. In a separate bowl, beat egg whites with cream of tartar until foamy. Gradually add sugar and beat until stiff peaks form.
  6. Gently fold the egg whites into the cream cheese batter in three parts, being careful not to deflate the mixture.
  7. Pour batter into the prepared pan. Tap gently to release air bubbles.
  8. Place the cake pan inside a larger roasting pan and fill the roasting pan with hot water to create a water bath.
  9. Bake for 60 minutes, then reduce oven temperature to 285°F (140°C) and bake for another 30 minutes.
  10. Turn off the oven and leave the cake inside for 15 minutes with the door slightly ajar.
  11. Remove from oven, unmold, and let cool completely. Dust with powdered sugar before serving, if desired.
