Ingredients

  • 3/4 cup hot water
  • 2 teaspoons baking soda
  • 3/4 cup unsulfured molasses
  • 1/2 cup (1 stick) salted butter, softened
  • 1/2 cup vegetable shortening
  • 2 cups granulated sugar
  • 1/2 teaspoon salt
  • 1 teaspoon ground cloves
  • 1 tablespoon ground ginger
  • 1 tablespoon ground allspice
  • 1 tablespoon ground cinnamon
  • 5 cups all-purpose flour

Instructions

  1. In a medium bowl, stir the baking soda into hot water until dissolved. Mix in molasses and let cool slightly.
  2. In a large bowl, cream together butter, shortening, and sugar. Add salt and spices; mix well.
  3. Pour the molasses mixture into the creamed mixture and stir until combined.
  4. Gradually add flour, mixing until a dough forms. Divide into two portions, wrap in plastic, and chill overnight.
  5. Preheat oven to 375°F. Roll out dough on a floured surface to 1/4-inch thickness. Cut with a round cutter.
  6. Place on parchment-lined baking sheets and bake for 10-12 minutes. Let cool on a wire rack.
